The Western diet is based on grain, mainly modern wheat. All commercially available modern wheat whether it is organically grown or not, is intensely genetically modified. It is a ghost of its original form. It is making us sick by the millions. Ms. Cosentino provides in depth research into the advantages of cooking with spelt, from its nutrition, taste, and is great for those with food allergies. The book also includes many recipes utilizing other whole foods and includes detailed information on the benefits of each of the types of whole food the recipes use. The recipes are delicious, easy to follow, and the ingredients are available either at grocery stores or in some cases specialty grocers like Whole Foods.
