I am completely baffled by this book and the reviews it has received! After only a few pages I was aghast and realized I had thrown my money away. I am not a medical professional or scientist but all of my own personal research into diabetes and related blood disorders strongly recommend avoiding refined carbohydrates. This book is full of recipes using highly refined carbohydrates: white sugar and white flour. I also found recipes containing an uncomfortably high percentage of calories from fat. I expected recipes emphasizing whole, low glycemic foods prepared in as close to their natural state as possible - foods that had as much of their beneficial properties (such as nutrients and fiber) intact. I was extremely disappointed by what this book had to offer and am sorry I bought it.
