Product Review
Designed to effortlessly slice delicate morsels of fresh fish, this elegant Yanagiba or Sashimi knife is an essential tool for any home sushi chef. An exceptionally long narrow blade measuring 11-4/5 inches in length carries a razor-sharp edge to cut into soft raw fish without crushing or damaging and finishes with a pointed tip for intricate tasks. Leveraging a 90-year history of superior workmanship, Shun knives are precision-forged in Japan by renowned blade manufacturer KAI. Combining high-carbon stain-resistant "super steel" with a one-sided, single-bevel design results in an exceptionally strong, sharp blade. Flipping the knife over shows a subtly concave backside created to resist sticking and to avoid damaging food. Forming a comfortable D-shaped hold, a fused blend of hardwood veneers and resin comprise the unique ebony PakkaWood handle. In addition, a traditionally offset stainless-steel bolster protects knuckles while a steel end-cap finishes the piece. Although dishwasher-safe, hand washing is recommended. The knife measures approximately 17 by 2 inches and carries a limited lifetime warranty. --Amy Arnold

Shun Pro: Yanagiba 12" - VG0300Y
Award-winning chef Laurent Gras prefers the speed, ease, and versatility of cutting with Shun Pro knives for the creation of his celebrated cuisine. Laurent is the national spokesperson for our Shun Pro line and it's no wonder Shun Pro is known as the kitchen cutlery for the ultimate connoisseur. The Pro series features the design preferred by professional Japanese chefs—a one-sided, beveled edge with a hollow-ground back. The single-bevel design means an incredibly sharp edge that's easy to maintain. Further, the hollow-ground back creates an air pocket between the blade and the food being cut. The result is less sticking to the blade and less friction damage to the food.
