This nine-inch serrated bread knife combines Shun technology and a lusciously curved black handle by award-winning custom knife designer Ken Onion. Made of a hardwood-resin fusion known as Pakkawood, the handle is designed to be truly ergonomic in order to increase control and reduce fatigue during long stretches of use. The Damascus-style ripples on the blade create air pockets that release food quickly, and the round tip aids in spreading mayonnaise or mustard. Excellent for cutting soft or crusty bread, as well as ripe tomatoes, any home chef who loves creating gourmet sandwiches would be honored to receive this gift-boxed beauty. Shun knives, made in Japan by KAI (Kershaw Cutlery), are quite possibly the sharpest knives on the market. A Shun edge, formed to an acute 16-degree angle, won't bend or waver due to the hardness of the VG-10 steel core used in its construction. Clad with 32 layers of high-carbon stainless steel (16 on each side), the blade resists rusting and maintain its razor edge for a considerable time. This 9'' multipurpose serrated/bread knife features the ergonomic designs of Ken Onion with an ambidextrous riveted Pakkawood handle and a reverse serrated blade that is aggressive enough to glide through the hard crust of artisan breads or heavy skinned fruit and vegetables, but will also make smooth cuts through meat without tearing.The blade construction is clad with 33 layers of steel and a VG10 "super steel" core ground to a 16 degree cutting angle.
