Product Description
This Mauviel Cuprinox sauté pan features an extra-thick 2.5 mm copper exterior (0.5 mm thicker than the Cuprinox Style line), making it a favorite of chefs who value conductivity in their cookware. Copper is an unsurpassed cooking material known for its ability to heat rapidly on the burner and cool nearly as quickly when removed (it's twice as conductive as aluminum). The 3.2-quart sauté pan performs particularly well when browning or braising cuts of chicken, beef, or pork, or when sautéing vegetables under high heat. The pan's straight sides also make it a great choice for multi-stage pastas and casseroles that require sustained stirring and simmering. The tight-fitting lid aids the bubbling process, sealing in heat, moisture, and aromas on low heat settings to give sauces a complex, rich flavor In addition to its copper exterior, Mauviel Cuprinox cookware includes a thin layer of stainless steel on the interior of each pan. The stainless surface cleans easily and doesn't impart metallic or other off flavors, as copper typically does when interacting directly with foods. The cookware also offers a pair of durable cast-iron handles that extend generously from the pan's sides for easier lifting. The handles are securely attached to the pot via stainless rivets for added strength. Mauviel recommends hand washing the cookware, which carries a limited lifetime warranty.

Think of French Rondeaus as the perfect pan that you never new exsited. They are generally wide, with sides that are comparatively shallower than a traditional French or Dutch Oven. This confirguration creates an environment that is particularly well-suited for shallow frying, poaching, sweating and creating intensely flavored, braises and stews. Why can't I do this all in a Dutch Oven? Because the ratio of diameter to height ensures that moistures evaproates at the correct speed. They also make excellent risotto pots. Mauviel's M'Heritage Cast-Iron Handle Collection is a true reflection of the company's history and testament to their staying power. Boasting the thickest copper construction of all their line (2.5mm), the cast-iron handle collection is true French Copper Cookware. It's performance is unsurpassed, while its reponsiveness is unparallaled. The Cast Iron M'Heritage collection does take one-step into the 21st century with a non-reactive stainless steel lining never needs to be re-tinned. Because of the heavier copper construction, the pans are able to achieve balance and optimum usability with the heavier cast-iron handles.
