This three-piece Laurent Gras Chef's Set features a 9-1/2-inch Yanagiba, a 6-1/2-inch Nakiri, and a 6-1/2-inch Deba knife. The elegant Yanagiba or Sashimi knife's narrow, exceptionally long, 9-1/2-inch blade carries a razor-sharp edge to cut into soft raw fish without crushing or damaging and finishes with a pointed tip for intricate tasks--an essential tool for any home sushi chef. Resembling a narrow rectangular cleaver, the balanced 6-1/2-inch Nakiri knife carries enough heft to handle thick-skinned pumpkins while avoiding being too unwieldy for delicate tomato-slicing tasks. The 6-1/2-inch Japanese Deba slips easily between flesh and bone and offers a broad blade for transporting foods--similar to a chef's knife. Leveraging a 90-year history of superior workmanship, Shun knives are precision-forged in Japan by renowned blade manufacturer KAI. Combining high-carbon stain-resistant "super steel" with a one-sided, single-bevel design results in an exceptionally strong, sharp blade. Each knife's subtly concave backside is created to resist sticking and to avoid damaging food. Forming a comfortable D-shaped hold, a fused blend of hardwood veneers and resin comprise the unique ebony PakkaWood handle. In addition, a traditionally offset stainless-steel bolster protects knuckles, while a steel end-cap finishes each piece. Although dishwasher-safe, hand washing is recommended.
