The reinforced blond wood handle, while not traditional on woks, stays cool for better control during cooking and serving and has a stout ring for hanging. The wide comfortable helper handle allows you to pick up the wok with both hands for easier balance. Large enough for a heap of bok choy, this deep pan helps keep oil splatters inside the wok--even at the high heats preferred by wok users. Joyce Chen's 14-inch flat-bottom wok is an excellent choice for high-heat cooking, especially on gas stoves, and uncoated carbon steel is the traditional version of this time-tested cooking utensil. Safety features include the addition of a blond-wood skillet handle, which doesn't conduct heat, and a wooden helper handle to help distribute weight, preventing accidents when moving or carrying food from the stove to the table. A few doses of oil dried over low heat will season your wok and seal the surface, creating a natural nonstick patina; applying a thin film of oil before storing is a good idea, too.
