Part of the Pro Chef Excalibur Series by Joyce Chen, the 14" Flat Bottom Wok Set has the Excalibur reinforced non-stick coating system which has been acclaimed by U.S. retailers, professional chefs, and consumers as the best performing non-stick finish for cookware in today's market and carries a 25 year limited warranty. This wok's professional weight is 2.0 mm of aluminum and carbon steel made for use on gas or electric burners. The Flat Bottom Wok's body is comprised of two layers of aluminum surrounding a carbon-steel core for rapid, even heating and cooling ¿ a must for any stir-fry. The Flat Bottom Wok Set includes; non stick wok and aluminum dome lid. This series features stay cool phenolic handles and the Excalibur non-stick finish is tough enough for metal tools. Joyce Chen opened her first restaurant in Cambridge, Massachusetts in 1958. The restaurant flourished, and in 1973 a larger Cambridge restaurant was opened. Chen also began writing Chinese cookbooks and in the 1970s began hosting a cooking show on public television. She found that the selection and quality of Chinese cookware in America didn't live up to her high standards¿ so she developed her own. Product Description
This roomy 14" wok heats quickly and exceptionally well: use it for family-size stirfries as well as steaming, braising, and deep-frying. It is coated with a premium-quality Excalibur nonstick surface that cuts down minimally on heat but makes the pan very easy to clean. The wok???s flat bottom can be used on either gas or electric cooktops and is more stable than the traditional Asian round-bottom pan. The handles have phenolic centers that keep them cool.
