Heavy-gauge carbon steel at a thickness of 2.3 millimeters turns this 12-by-3-1/4-inch wok into a tough workhorse that takes direct heat up to 535 degrees F (280 degrees C). Moreover, Typhoon's SuperProbon nonstick finish stands up to metal utensils, a must for many wok chefs. The wok's slightly flattened bottom sits securely on any cooktop, whether electric, gas, halogen, ceramic, or induction. Typhoon makes a variety of woks that, in the company's motto, "cook up a storm." This one competently handles the professional chef's home cooking needs. A particularly thoughtful design feature is that the six-inch handle, which is made of hardwood and durable stainless steel, screws into an anchor welded to the outside of the wok, thus keeping the inner surface absolutely smooth for stir-frying. The handle removes for compact storage, and a sturdy ring on the end allows the wok to be hung.
